Tomorrow Bubs has an early baseball game, and getting some supper in him before these early games is always a challenge. So I decided to prep tomorrow night's dinner today while I have some free time.
I found a picture of a yummy looking wrap on Instagram from my sister-in-law's blog at Making it Milk-Free. I thought it should be easy enough to replicate.
She used a ready-made rotisserie chicken, but those usually contain things we can't have. So I bought a fresh, free-range chicken at the store. I have a Pampered Chef Deep Covered Baker that claims to microwave a chicken in 30 minutes, so I thought I'd give it a try. After rinsing and patting the chicken dry, I lightly rubbed it with oil then sprinkled it with black pepper. I put the lid on and stuck it in the microwave. After 30 minutes of cooking, I removed the dish and let it sit with the lid on for another 10 minutes. The chicken turned out perfect! We will definitely be using this method to cook chicken again.
After cooling for a bit, I just randomly cut the chicken off the bone (since I wanted it to be shredded anyway). I used a gluten-free tortilla and piled on some spinach, shredded chicken, and sliced avocado. My SIL made hers with a bit of ranch dressing, but that's out of the question for us. I will add a few drops of lemon juice and maybe sprinkle a few sunflower seeds on it tomorrow night before serving. Look delicious!
