Cheesecake (Top 8 Free)

Ever since I found out that Daiya came out with a cream cheese, I've been dying to make cheesecake. 

12 Top 8 Free crackers/cookies (I used EnerG Cinnamon Crackers)
2 tubs Daiya original cream cheese
2 egg replacements (I used EnerG)
2 Tbsp vanilla
2 Tbsp lemon juice
2/3 c sugar
Top 8 Free chocolate chips (I used Enjoy Life)

Preheat oven to 350º.  Spray muffin pan with nonstick spray (I used my kitchen spritzer with canola oil since all the store bought sprays contain or are processed with soy).  Place a cracker in each well.  In a medium bowl (or Kitchinaid Stand Mixer) beat cream cheese.  Add "eggs," vanilla, lemon juice, and sugar.  Beat until smooth.  Fill each baking cup 2/3 full with cream cheese mixture.  Top with chocolate chips (or other topping of your choice - you may want to wait until after baking if topping with fruit, etc).  Bake 15-17 minutes.

I baked the recipe this time, but you could probably get away with not baking and simply refrigerating for a few hours (since there aren't real eggs in it).  These definitely did not come out nice and pretty like I had hoped.  Baking them made them boil/melt and get really runny.  But that didn't effect the taste.  They were delicious! 

This is what I used for the "crust."  The cinnamon added a nice flavor.
