Chocolate Covered Rice Krispie Treat Bites (Top 8 Free)

Looking for an easy treat to share with lots of people?  I whipped up these babies in no time the night before a potluck.  My kids got enjoy something from the potluck line, and they are good enough for everyone to enjoy.

I served these on a scorching summer night, and they were quite messy since the chocolate melted in the heat (even on a chilled platter).  I recommend serving them straight from the fridge if possible, or at least indoors.

 

Begin by making Rice Krispie treats.

1 bag mini marshmallows
3 Tbsp milk-free butter (I used Earth Balance Soy Free)
6 cups Gluten-Free Rice Krispies

In a large pan, melt butter and marshmallows over low heat until melted.  Remove from heat and mix in Rice Krispies until completely coated.  Press into 9x13 dish with a piece of wax paper that has a small amount of butter on it (so it doesn't stick).  Allow to cool.

*I like to add some extra marshmallows when I add the Rice Krispies for a little something extra.  

Allow these to set, then slice into small, bite size pieces. 

 

Over low heat, melt 2 bags of Enjoy Life chocolate chips and a few dollops of coconut oil.  Once completely melted, dunk each Rice Krispie bite in the chocolate and coat well.  Set on a parchment paper lined baking sheet.  Once the baking sheet is full, place in refrigerator until set.  Store in an airtight container.

  1. I make a similar treat, but with chocolate chips IN the rice krispies. I love your idea of chocolate coating them too! It must help to hold the shape as well. Thanks for sharing. :)

    1. I love making Rice Krispie Treats with the chocolate chips in them as well. I used to make them with M&M's, but that's out of the question now. ;) I also like them with sprinkles. There are so many fun ways to make these, especially cute seasonal ideas.
